If you love casserole dishes then you are surely going to fall in love with this one. Cheesy potato casserole is a classic dish but I have done my variation here by adding my favorite ranch dressing.
Potatoes and cheese are a match made in heaven and the ranch seasoning is the icing on the cake. There is nothing in this dish that you would dislike. It is a delicious side dish to adorn your dinner table.

Cheesy ranch potato casserole
- Time for preparation: 10 minutes

Ingredients:
- Frozen hash brown potatoes (southern-style) – 32 oz
- Onions – 2 tablespoons (minced)
- Green onions – ½ cup
- 1 can chicken soup Cream – 10.5 oz
- Sour cream – 2 cups
- Unsalted butter – 4 tablespoons
- Dry ranch seasoning – 1 teaspoon
- Cheddar cheese – 3 cups (shredded and divided)
Method:
- Firstly, preheat the oven at 350֯ F.
- Spray a 9 x 13 casserole dish with a non-stick cooking spray and keep it aside.
- Take a large bowl and add 32 oz frozen southern style hash brown potatoes, 2 tablespoons of onion, 10.5 oz or 1 can of cream of chicken soup, 2 cups sour cream, 4 tablespoons unsalted butter, and 2 cups of shredded cheddar cheese. Sprinkle 1 teaspoon of dry ranch seasoning on this and mix it thoroughly until it all comes together.
- Keep the remaining 1 cup shredded cheddar cheese and ½ cup green onions for later use.
- Take the mixture in the bowl and place it in the 9 x 13 casserole dish that has been sprayed and kept ready. Top this mixture with the remaining 1 cup of shredded cheddar cheese.
- Bake this cheesy ranch potato casserole for about 40-45 minutes. The baking time will slightly vary depending upon your oven. The cheese on top of the casserole should be golden brown in colour. That’s when you know that your casserole is ready.
- Now, take it out from the oven and sprinkle ½ cup green onions on it.
- Serve immediately.
Tips and tricks:
- I would be a great idea to mix all the ingredients in a bowl and then transfer it to the casserole. This will prevent the casserole from getting soiled on the sides and getting burnt in the oven.
- You can make this casserole beforehand and freeze it or just keep it in the refrigerator for up to 2 days. Then all you have to do before serving is spread the cheese on the top and bake. If you are freezing it then you will need to thaw it before baking.
- You can serve this cheesy potato ranch casserole with fried chicken, chicken breast sauteed in garlic butter or toasted garlic bread.
