Ingredients:
- 1/2 head of cabbage, chopped
- 1 large onion, diced
- 2 carrots, peeled and sliced
- 2 celery stalks, chopped
- 3 cloves of garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, chopped
- 1 can diced tomatoes
- 14.5 oz 6 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to your taste
- Optional: fresh parsley for garnish
Instructions:
- Olive oil should be heated over medium-high heat in a large pot.
- Add diced onions, carrot and celery and cook 4 to 5 minutes.
- Add minced garlic along with spices and stir another minute.
- Stirring frequently, add the cabbage and let it sweat for five minutes.
- Pour in vegetable broth and diced tomatoes. Simmer, covered, for ten minutes, or until the vegetables are cooked to your desired tenderness.
- Take the cabbage soup from the heat; add lemon juice, parsley, and cracked black pepper.
- Stir once more and serve.
