Homemade Vegetable Cabbage Soup

Ingredients:

  • 1/2 head of cabbage, chopped
  • 1 large onion, diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 3 cloves of garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 can diced tomatoes
  • 14.5 oz 6 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to your taste
  • Optional: fresh parsley for garnish

Instructions:

  • Olive oil should be heated over medium-high heat in a large pot.
  • Add diced onions, carrot and celery and cook 4 to 5 minutes.
  • Add minced garlic along with spices and stir another minute.
  • Stirring frequently, add the cabbage and let it sweat for five minutes.
  • Pour in vegetable broth and diced tomatoes. Simmer, covered, for ten minutes, or until the vegetables are cooked to your desired tenderness.
  • Take the cabbage soup from the heat; add lemon juice, parsley, and cracked black pepper.
  • Stir once more and serve.
