- 8×8 baking dish
- Small bowl
- Lemon zester
- Medium bowl
- Sharp knife

Ingredients for lemon filling
- Lemon juice – ⅔ cup
- Lemon zest – 1 tbsp
- Eggs -6
- Egg yolks – 3
- Pure vanilla extract – ½ tsp
- Honey -¾ cup
- Arrowroot powder -2 tbsp
- Very hot water – 2 tbsp
- Organic powdered sugar
- Lemon slices
Ingredients for Crust
- Blanched almond flour -1 ¾ cups
- Sea salt – ¼ tsp
- Honey – 3 tbsp
- Lemon zest -1 tsp
- Vanilla extract – ½ tsp
- Medium egg – 1
- Coconut oil
Instructions
- Preheat the microwave at 350°F.
- First grease the baking dish with coconut oil and then set parchment paper on it.
- With the help of lemon zester remove the zest of one lemon.
- Cut the lemon into four pieces.
- Take a bowl and squeeze out the lemon juice. Follow the same process with all lemons. We need ⅔ cups of lemon juice.
- Take a medium-sized bowl and crack and add 6 eggs.
- Add 3 egg yolks and whisk with the help of a whisker.
- Keep ready ¾ cup of honey aside. We need the lemon filling. Keep in mind that once the crust is ready we have to gently add filling immediately in it.
- Take the food processor and add all ingredients mentioned under the crust section except eggs. Now mix all the ingredients nicely.
- Add egg and mix. We have to mix till the dough is ready.
- Now apply some oil in your hand and add the dough to the baking pan. with palms and fingertips press the dough gently and set it at the bottom of the baking dish.
- Bake dough for around 8 minutes.
- Add lemon zest around 1 tbsp, lemon juice, honey around ¾ cup, and vanilla extract around ¼ tsp to the bowl of eggs we whisked.
- With the whisker whisk the mixture till ingredients are combined well.
- Take a small bowl and add 2 tbsp arrowroot and 2 tbsp of hot water and mix. Remember water should be hot not boiling.
- Now add this slurry to the filling ingredients bowl and whisk.
- Switch off the oven and take out the crust and place on a hot pad.
- Now gently but immediately pour the lemon filling and place the baking pan again in the oven and bake for around 25 to 30 minutes.
- When the center of the dish becomes slightly jiggly in the center it means Gluten-Free Lemon Bars are baked.
- Let the lemon squares cool down for 2 hours.
- Now serve the dish chilled or at room temperature. You can sprinkle some powdered sugar if you want before serving.
