Ingredients:

  • Frozen peas (1/2 cup)
  • Eggs (2)
  • Toasted sesame oil (1 tablespoon)
  • Soy sauce (2 tablespoons)
  • Bag of frozen cauliflower (10-15 oz)
  • Olive oil (2 tablespoons)
  • Carrots (2)
  • Garlic (1 tablespoon) (diced)
  • Sesame seeds (optional)
  • Onion (1/2) (diced)

Instruction:

  • Take a look at the instructions at the back of the packet to make sure that everything is done properly.
  • Put it in the microwave so that it gets defrosted before it is transferred to the pan.
  • Take a large pan and put it over medium flame with a little olive oil.
  • Let the oil get hot in the pan over medium flame itself. Once it is hot, throw in your onions and carrots.
  • Keep on stirring the onions and the carrots till the time they start getting translucent and tender. Keep the flame on the medium so that the vegetables do not get burnt or are left undercooked.
  • After 5-7 minutes, proceed to add in your diced garlic and let the flavours get absorbed.
  • Take your peas and pre-cooked cauliflower rice and put them in the pan and keep on stirring it so that it doesn’t get stuck at the bottom.
  • Now time to throw in your eggs. But let me tell you there is actually a way to complete that. Proceed to make a hole in the middle so that you can see the bottom of the pan.
  • Break your eggs in the middle and do not mix them with the rice until they start cooking.
  • Once they start scrambling, and then start combining it with the rest of the things that are there in the pan.
  • Towards the end when everything is combined, add in your soy sauce and the sesame oil according to your taste.
  • They both are sour, so make sure you don’t end up adding a lot.
  • Garnish with sesame seeds and serve them warm.
