One of the best desserts anyone can have is a cake. So, here I am to tell you the recipe for making coconut custard cake at your home. I would say prepare this easy and simple recipe and enjoy the delicious cake this weekend.
You know coconut custard cake is my favorite as my granny used to prepare this for me every weekend and its taste is so delicious that you can make them for your whole family.
From kids to surprising your husband, this cake is so light and still so tasty that you’ll fall in love with just one bite.
Types of Equipment used for preparing coconut custard cake:
- Some bowls( bowls of all sizes)
- A set of kitchen knives
- A spatula for mixing
- Basic kitchen cutlery
- Cooking spray
- Oven
- Baking sheet
- Toothpick
- Stand mixer
This equipment is enough to prepare the delicious coconut custard cake at your home. In about two hours and 10 mins, the cake will be ready to be served.
Ingredients required for making coconut cake layers:
- Take all purpose flour for about 2 and a half cups
- 2 and a half small spoons of baking powder
- ½ small spoon of salt
- ¾ cup of unsalted challenge butter
- 1 and a half cups of sugar
- ¼ cup of vegetable oil
- 2 small spoons of coconut extract
- ½ small spoon of vanilla extract
- 4 large eggs
- 1 and ¼ cups of coconut milk
Ingredients for making coconut custard:
- 2 eggs yolks
- 6 small spoons of sugar
- 2 small spoons of cornstarch
- 1 and a half cups of milk
- 1 cup of shredded coconut
- 1 small spoon of salted challenge butter
- ¼ small spoon of coconut extract
- ¼ small spoon of vanilla extract
Ingredients for making coconut cream cheese frosting:
- 16 oz of challenge cream cheese
- 1 cup of unsalted challenge butter
- 11 cups of powdered sugar
- 2 small spoons of coconut extract
- ½ small spoon of vanilla extract
- 1 and a half shredded coconut
Instructions to be followed for making the cake:
- Preheat the oven at 350F degrees and prepare three 8 inch cake pans with parchment paper and grease all the sides.
- Now, take a bowl and combine the flour, baking powder, and salt into it.
- Take a large bowl and Add the butter, sugar, oil, and extracts and mix them for 3-4 mins until it becomes fluffy.
- Add the eggs one at a time and mix until it becomes moist.
- Now, add half of the dry ingredients to the batter and mix it well.
- Add the coconut milk and mix everything properly.
- Add the remaining dry ingredients and mix everything well.
- Divide the batter into 2 equal parts and put them into the cake pans and bake it for 20-25 mins.
- Take out the cake from the oven and keep it aside to cool down
Instructions for the custard:
- Take a medium-sized bowl and add the eggs and beat it and keep aside.
- Add the sugar, cornstarch, and milk to a large saucepan and whisk until it becomes smooth. Then, cook over medium heat and stir it until it thickens.
- Now, remove the pan from the heat and add a little bit of milk mixture to the egg yolk and whisk it. After that add the egg mixture again into the milk mixture.
- Put everything into the pan and start heating. Stir in the shredded coconut and let it boil for 2 mins and then remove from the heat and let it cool and become thicker.
- Then, add the butter and other extracts and then stir it well until it becomes smooth. Take a bowl and Pour everything into it and keep it in the fridge for cooling.
For frosting:
- Beat the cream cheese and butter together until they become smooth in a bowl.
- Add half of the powdered sugar and mix until they are well combined and become smooth.
- Slowly add the remaining powdered sugar and mix until they are combined.
Assemble the complete cake and then it is ready to be served.
