Ingredients list:

  • A single tablespoon of olive oil
  • 1 medium onion, chopped; 2 tomatoes; 2 celery stalks; 3 minced garlic cloves;
  • Eight glasses of chicken stock
  • 2cups of cooked chicken, chopped/shredded
  • two cups of noodles made with eggs
  • One tsp. of dried thyme
  • one tsp of dried parsley
  • Add salt and pepper to taste.
  • Optional: One bay leaf and some fresh parsley as garnish

Instructions:

  • Warm up the olive oil in a big Dutch oven over medium heat.
  • Add the celery, carrots, and onion, and sauté for four minutes.
  • Add garlic and sauté an additional minute
  • Stir in broth, chicken breast, salt, pepper, oregano, thyme, and bay leaves.
  • Bring to a simmer over medium-low heat.
  • Once simmering, with lid slightly askew cover the pot and cook till the chicken is tender and easily shreds, about 15 mins.
  • Pull chicken apart into broth with two forks.

  • Return soup to low boil; add in egg noodles.
  • Cook 6-7 minutes or until pasta is al dente.
  • Serve hot sprinkled along with freshly chopped parsley and your choice of bread or crackers on the side.
