Broccoli Cheese Soup Recipe

Winters are incomplete without soups and just imagine a soup full of veggies and cheese.

So here I am to tell you the recipe for making broccoli cheese soup at your home. Just follow these simple steps and prepare this delicious soup.

Ingredients:

 

  • Take separate 1 small spoon of unsalted butter and 4 small spoons of unsalted butter
  • 1 small or medium diced yellow onion
  • 1 clove of garlic, make sure to peel and mince it
  • ¼ cup of all-purpose flour
  • 2 cups of low-sodium vegetable stock
  • 2 cups of half-and-half
  • 2 to 3 cups of broccoli florets, make sure to dice them into bite-size pieces + 1cup of stems
  • 2 large carrots, should be trimmed, peeled, and sliced into small thin rounds of about 1/16th inch
  • ¾ small spoon of salt
  • ¾ small spoon of freshly ground black pepper
  • ½ small spoon of smoked paprika or regular paprika
  • ½ small spoon of dry mustard powder
  • Pinch of cayenne pepper
  • 8 ounces of grated high-quality extra-sharp cheddar cheese, keep a small amount for garnishing purpose

Instructions to be followed for making broccoli cheese soup:

  1. Take a small saucepan and add 1 small spoon of butter into it and also put the diced onion and then saute it over medium heat for about 4 mins. Check the saucepan when the onion is translucent and barely browned and stir it intermittently.
  2. Now, add the garlic and keep cooking it for about 30 sec and keep stirring it constantly so that it does not burn. Then, remove the pan from the heat and keep it aside.
  3. Take a heavy bottom pot and add 4 small spoons of butter, flour, into the pot and cook over medium heat for about 3-5 mins, whisking it constantly until the flour thickens. Make sure to make the roux properly because it is very important for the thickness of the soup.
  4. Now, add the vegetable stock into the pot and whisk it constantly.
  5. Then, slowly add the half-and-half into it and whisk it constantly.
  6. Now, let the mixture simmer over low heat for 15 to 20 mins or until is reduced and thickened, and keep whisking it properly.
  7. When the mixture is simmering, you can chop the broccoli and the carrots into small pieces. After 15-20 mins of simmering, add the chopped carrots, broccoli, and the onion and garlic which you prepared earlier.
  8. Now, add the salt, pepper, paprika, dry mustard, and cayenne into the soup. Stir everything so that they get combined.
  9. Then, allow the soup to simmer for about 20-25 mins or until it is thickened and keep whisking it.
  10. Now, grate the cheese and add the cheese into the soup after simmering for 20-25 minutes.
  11. Then, transfer them into the bowls after 1 min of adding the cheese and serve it with extra cheese as garnish.
