Taco Soup Recipe

Ingredients:

  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 1 can (15 ounces) of rinsed & drained black beans
  • Rinse and drain one can (15 oz) of pinto beans.
  • 1 can, 15 oz., corn, drained
  • 1 can, 15 oz., chopped tomatoes with green chilies
  • 1 can, 8 oz., tomato sauce
  • 1 pkt. taco seasoning mix
  • 1 pkt. ranch dressing mix
  • 2 cups water or beef broth
  • Salt and pepper, to taste.
  • Toppings: Chopped cilantro, sour cream, tortilla chips, sliced jalapeños and cheese, if desired.

Preparation

  • In a big pot or Dutch oven, coat the bottom with olive oil and brown the ground beef along with diced onions until there is no pink in the meat; then drain excess fat.
  • Add the garlic and the taco seasoning. Stir for one minute.
  • Add the remaining ingredients to pot of soup and bring to a boil. If desired, thin the soup with up to 1 cup of water.
  • Once it boils, reduce the heat to a simmer for 25 to 30 minutes.
  • Serve with your favorite toppings.
